Featuring a purple flesh marbled with white and accentuated by a white border beneath the skin, the Blue Star potato maintains its distinctive appearance even after cooking, imparting a touch of lilac to your mashed potatoes and chips. With a mild, somewhat neutral flavor complemented by hints of nutmeg, it pairs beautifully with its firm texture when steamed or develops a delightful crispiness when fried or roasted.
