Anchovies captured in the Bay of Biscay between April and June, during the best season of the season, are used in the "Serrats" Preserves.
A point of distinction of our Anchovies is that they are prepared by hand using a meticulous process that is very similar to the one used for salted Anchovies, meaning that the original character remains intact. These anchovies fillets are delectable with their meat and aromatic flavor.
As a final step, they are coated in olive oil specially selected for this purpose. Its intense flavor gives the Anchovies a unique and exclusive flavor that is reminiscent of the sea and sun-dried fields.
