Roseval potatoes are petite, evenly sized tubers characterized by their elongated, oval shape with a slight flattening. Their thin, smooth, dark red skin boasts shallow eyes and light brown spots. Beneath the surface, the flesh is moist, low in starch, and typically a solid yellow hue, occasionally featuring delicate pink-red veins. When prepared, Roseval potatoes offer a soft, creamy texture and a delightful flavor profile that's both sweet and earthy, with subtle nutty undertones.
