Jerusalem artichokes are from the tuber family like potatoes. They are not from the artichokes family and they are not from Jerusalem, but originally from Italy. They look like Jerusalem artichokes, they’re sweet and almost garlicky and mushroom.
Jerusalem artichokes vary from oblong to much-elongated and can be small or large, it looks like ginger roots. The skin is yellowish to brown and purple and the flesh is white and crisp.
Jerusalem artichokes are nutty, slightly sweet but mild, the skin is edible and they are great roasted. They are harvested from October through to March.
