The origin of this precious dressing can be traced back more than 2000 years. Interestingly, the Roman historian APICIUS in his "De Re Coquinaria" mentions its use on 60 plates. This balsamic vinegar is made from simmered grape musts extracted from Modena grapes and a percentage of strong wine vinegar which is added at just the right time.
The vinegar is naturally aged and refined in small butts of various kinds of wood, such as oak, chestnut, mulberry, etc., in line with the habits of the production area. All kinds of dishes can be served with it, including appetizers and desserts.
