This Moscatel vinegar hails from the Eastern Mediterranean, celebrated for its bright citrusy orange aroma and versatility. Often used to enhance a variety of dishes, it brings a bold, aromatic profile with high acidity and depth. The vinegar’s signature floral fragrance is due to essential oils in the Moscatel grape, setting it apart from other varieties.
The selected Moscatel vinegar undergoes a meticulous fermentation process in which the natural alcohol is transformed into acetic acid by acetic acid bacteria. After fermentation, it is clarified and carefully blended with concentrated grape must to enhance its complexity. The final product is then filtered using tangential filtration and bottled, ensuring a refined and vibrant finish.
