Protected by a designation of origin, Manchego is the result of pressed-curd sheep milk, from the manchega breed, found in the wild central Spain.

Its rind is immediately recognizable and is a semi-hard cheese very pleasant for any palates. With fruity, nutty notes, the staple cheese in many spanish recipes is a go-to dairy products, very smooth when young as the manchego 2-3 months.
