Fiore Sardo cheese is aged for at least 105 days before being consumed as a table cheese, and over six months before being grated over tasty first courses. The rind is rough, dark brown in color & the paste is compact, hard, without holes, white or straw yellow. Their flavor is intense, rich & complex with spicy notes having an aroma of milky along with smoky.
Pinna Fiore Sardo is splendidly accompanied by tasty bread and great red wine. Enjoying it with sweet grapes or ripe figs is a wonderful way to end a meal.
One of the oldest traditional Sardinian cheeses, preserved for thousands of years and protected by the Protected Designation of Origin. It is still produced according to ancient traditions in the sheepfolds of Sardinian shepherds with freshly milked raw, unpasteurized milk.
The cheeses weigh about 4 kg, with the typical rounded heel in the shape of a mule's back. They are treated on the surface with olive oil and smoked, giving them a unique rustic appearance.
